Various food establishments in Ethiopia
In Ethiopia, various food establishments are known to have poor food safety practices. The low level of hygienic practice in various food establishments may be due to several factors, such as lack of formal education, poor health awareness, insufficient hand washing facilities and training in food hygiene.
Previous studies on food hygiene practices in Ethiopia focused on street food vendors. However, this study aims to assess the knowledge and preventive practices of food handlers.
A facility-based cross-sectional study was conducted among 369 food handlers in Mekelle town. Data was collected using a pretested questionnaire. Participants were asked to rate their level of knowledge and preventive practices.
Only a few participants scored more than 80%. Food handlers were divided into two groups according to their knowledge and preventive practices. Those who had a good level of COVID-19 knowledge and preventive practice were classified as “good”. Meanwhile, those who did not have a good knowledge of COVID-19 and did not practice good prevention were considered to have poor knowledge and preventive practices.
There were also significant correlations between a good level of knowledge and practice and between a favorable attitude and practice. Moreover, there was a positive association between a good level of COVID-19 preventive practice and the presence of hand washing facilities.
Food borne illnesses are a serious public health problem. Especially, travelers and immigrants are susceptible to them. It is important to improve the regulatory system in food establishments to prevent such diseases from spreading.
Variation from establishment to establishment
In this study, we sought to discover what food safety practices and technology had to offer by evaluating the implementation of such systems in seventy government-run food establishment programs across the country. We tested the effects of food-safety-related measures on foodborne illnesses and outbreaks in order to determine the most effective approaches for reducing or eliminating such adverse health effects. This is a challenging task, as we face a number of issues such as inadequate regulatory and public-education efforts and the lack of a conducive market to reward such efforts. However, such efforts can only yield tangible results if the appropriate levers of control are implemented. Specifically, the following were evaluated: a. the implementation of an electronic system, b. the implementation of a multi-factor authentication and c. the creation of a secure online database.
To answer the first two questions, we developed a multi-tiered strategy involving several components, including the implementation of an electronic food safety system, a centralized public-education program, and a robust online database for the collection and analysis of data from local inspection programs. These factors were complemented by an array of data-driven decision making strategies aimed at reducing the impact of adverse health outcomes. The results indicate that the adoption of these measures had an effect on outbreaks, re-inspections, and the aforementioned measures. Ultimately, we believe these results can lead to the development of an integrated, comprehensive and sustainable system of food-safety-related measures to support the development of an industry-leading food industry.
Unhygienic food handling practices
